5 Minute Shrimp Ceviche

Ingredients:

  • 1/2 pound medium-sized shrimp, peeled, deveined, and chopped into bite-sized pieces
  • 1-2 jalapeños, finely diced (adjust to taste)
  • 1/2 cup red onion, finely chopped
  • 1-2 cloves garlic, minced
  • 2 medium tomatoes, diced
  • Juice of 4-5 limes
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)
  • Tortilla chips or tostadas for serving

Instructions:

  • Ensure the shrimp is peeled, deveined, and chopped into bite-sized pieces.
  • In a mixing bowl, combine the chopped shrimp, diced jalapeños, chopped red onion, minced garlic, and diced tomatoes.
  • Squeeze the juice of 4-5 limes over the mixture. The acid from the lime juice will “cook” the shrimp. Stir well to ensure the shrimp is well-coated.
  • Season the ceviche with salt and pepper to taste. Stir again to distribute the seasoning evenly.
  • Allow the ceviche to marinate for about 3-5 minutes. The shrimp should turn opaque, indicating that they are “cooked” by the lime juice.
  • If using cilantro, add chopped fresh cilantro to the ceviche and stir gently to combine.
  • Spoon the shrimp ceviche into serving bowls or onto tostadas. Garnish with additional cilantro if desired.
  • Serve immediately with tortilla chips or tostadas. The ceviche is best enjoyed fresh.
