Ingredients:
- 1/2 pound medium-sized shrimp, peeled, deveined, and chopped into bite-sized pieces
- 1-2 jalapeños, finely diced (adjust to taste)
- 1/2 cup red onion, finely chopped
- 1-2 cloves garlic, minced
- 2 medium tomatoes, diced
- Juice of 4-5 limes
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
- Tortilla chips or tostadas for serving
Instructions:
- Ensure the shrimp is peeled, deveined, and chopped into bite-sized pieces.
- In a mixing bowl, combine the chopped shrimp, diced jalapeños, chopped red onion, minced garlic, and diced tomatoes.
- Squeeze the juice of 4-5 limes over the mixture. The acid from the lime juice will “cook” the shrimp. Stir well to ensure the shrimp is well-coated.
- Season the ceviche with salt and pepper to taste. Stir again to distribute the seasoning evenly.
- Allow the ceviche to marinate for about 3-5 minutes. The shrimp should turn opaque, indicating that they are “cooked” by the lime juice.
- If using cilantro, add chopped fresh cilantro to the ceviche and stir gently to combine.
- Spoon the shrimp ceviche into serving bowls or onto tostadas. Garnish with additional cilantro if desired.
- Serve immediately with tortilla chips or tostadas. The ceviche is best enjoyed fresh.
This quick and easy shrimp ceviche is perfect for a light and refreshing appetizer, snack or meal. Adjust the spice level by adding more or fewer jalapeños according to your preference. Enjoy!
