Banana Protein Muffins

Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup protein powder (vanilla or banana-flavored)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted (or substitute with a healthy oil like coconut or avocado oil)
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)
  • 1/4 cup chocolate chips (optional)

Instructions:

  • Preheat your oven to 350°F (175°C).
  • Line a muffin tin with paper liners or grease the cups to prevent sticking.:
  • In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Add Greek yogurt, honey or maple syrup, eggs, and vanilla extract to the mashed bananas. Mix well until combined.
  • In a separate bowl, whisk together the all-purpose flour, protein powder, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Pour in the melted butter and continue to stir until the batter is smooth.
  • If using, gently fold in the chopped nuts and chocolate chips until evenly distributed throughout the batter.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
